peanut butter blossoms

it's been awhile since i baked and as i mentioned last friday, my sweet tooth self needed to try this cookie recipe. late sunday afternoon is the perfect time to wind down, watch football and bake cookies. and with an eager helper, who can say no?

with a little guy at home who's allergic to tree nuts, this peanut butter recipe was safe and i kind of twisted two recipes to fit my ingredients on hand. my basis for the peanut butter cookie recipe is this gluten-free recipe from lauren's latest i shared last friday (minus vanilla but still taste delicious!). 

and how can i let this household run without nutella or vanilla on hand? baffles me. so i substituted the nutella with unwrapped- milk chocolate pieces aka hershey kisses (holiday leftover). got that idea from the crisco peanut butter blossoms recipe found on the vegetable oil bottle i bought!

here's the ingredients and recipe :

1 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla (which i didnt use)

mix well and i didnt even have to bust out the standup mixer for this task. less production, less cleanup - the better!

shape to balls and place on silpat or parchment paper lined baking sheets. bake 10 mins at 350 deg preheated oven.

as soon as you take out cookies, place unwrapped chocolate piece on middle of each cookie. let cool completely on wire rack. enjoy!

I'm going to give this a try. I have a lot of friends whose kids are allergic to all kinds of nuts. They have to be so vigilant with any store bought food.
